How do restaurants get rid of food waste?

Restaurants get rid of food waste in a sealed food bin, collected separately and sent for anaerobic digestion. Since 31 March 2025 a restaurant in England with 10 or more full-time-equivalent staff must keep food waste out of general waste; smaller kitchens have until 31 March 2027. The usual setup is a 110 litre lidded bin by the pot-wash, lined with a bag, emptied two or three times a week. Plate scrapings, prep trimmings, out-of-date stock and coffee grounds all go in; packaging stays out. Cooking oil is collected separately in drums. Macerators that send food down the drain do not count as separate collection. We collect food waste in sealed 110 litre bins alongside general waste and recycling.
